Because of their central importance in determining the organoleptic properties of foods, volatile compounds are the subject of intensive research in food and sensory sciences. However, passed the gastrointestinal system, the metabolic behavior of these compounds has not been evaluated. We hypothesize that the characterization of volatile compounds in biological fluids by GC-MS and using a new approach by volatilomics can be a suitable approach to study the metabolic footprint of foods on the human metabolome, in particular for the identification of food intake biomarkers (FIBs). The study was conducted according to the protocols set up for the European Food Biomarkers Alliance (FoodBAll) project.
