Around 170,000 tonnes of cheese per year are made in Switzerland, which corresponds to a good 40 per cent of the quantity of milk produced. Cheese production is therefore a business of considerable importance for the national economy. In the competitive battle with cheaper foreign cheese varieties, Swiss cheese has to make a mark for itself as a top quality premium product. Agroscope supports Swiss cheese makers in achieving this aim.
This support consists of

- developing innovative technologies
- gaining basic knowledge for avoiding problems of quality.
The solutions worked out by research are passed on to practitioners through the regular further training of regional advisors, in cheese-makers' discussion groups and through the advice provided by Agroscope.
