New Protective Culture from Agroscope Prevents Faulty Fermentation in Cheese Production

Agroscope has developed a protective culture against butyric acid fermentation, which can cause millions of CHF-worth of damage in the cheese sector. The culture prevents the formation of undesirable gases and negative changes in the taste of the cheese.
